Pump Up the PB

Every day we’re thankful that we’re not allergic to peanuts, because we are fans of the butter de peanut.

While making your favorite PB snack, do find the knife just ain’t getting the job done? Calling the Peanut Butter Pump to the rescue! It’s a convenient and easy way of dispensing and measuring peanut butter. It’s also fab for measuring exact amounts for recipes without the need of a spoon, knife or even needing to remove the lid on the jar.

So lazily wonderful!

The PBP features a sliding airlock mechanism that ensures a perfect pump every time by locking out the air to create suction that pulls the airlock downward with each pump (So many potential jokes here). Plus, the pump cleans the inside of the jar as it removes the peanut butter, so no wasted goodness!

Get yours for $20. Comes with two nozzles to meet your needs. Works with crunchy peanut butter, but if you’re a natural PB lover—you’re out of luck. The oil separation + the pump = not gonna happen.

Imagine living in a world where desserts are low-cal and good for you…

We’ve said it often. Why are icky vegetables good for you, but delicious, decadent treats are high in calories and sugar- -therefore making them “bad” for us? It seems so unfair.

At least we can get a little bit closer to dessert nirvana with No Sugar Aloud! instant dessert mixes.Chef Rodolfo Fernandes came up with the better-for-you treats after he changed to a healthier lifestyle, but still craved a good dessert.

Wethinks any thing is a good thing to celebrate. Let’s say you didn’t poop your pants today. Or, you didn’t tell your extremely annoying marketing manager to STFU—even though she’s a complete wenchbag and deserves it. Kudos!

When you get home tonight from working way too hard, slip into your comfy clothes, and whip up a tray of these delights. You’ve earned it!

​Champagne Jell-O Shots

Ingredients:
1 cup champagne
1 tbsp. lemon juice
1 tbsp. sugar
3 envelopes gelatin
1 cup white grape juice or Sprite
 
Instructions:
Combine champagne, lemon juice, and sugar in a saucepan. Heat mixture over low heat to dissolve sugar (do not boil). Sprinkle gelatin on top of warm liquid. Stir about 2-to-3 minutes until gelatin has completely dissolved, and remove from heat. Stir in 1 cup white grape juice or Sprite. Pour mixture into individual shot cups and chill for 2 hours, or until firm. Serve cold.

For Jello squares:
Grease a loaf pan with nonstick cooking spray. Pour mixture into mold and chill for 2 hours, or until firm. Invert jello to parchment paper-lined cutting board and slice into squares. Serve cold.

Celebrate the 'Choke

We’ve always loved a big platter of warm spinach artichoke dip. All that gooey, melty, deliciousness. We had no idea, nor did we really give two tortilla chips about the origin of the artichoke in the USA. But, we are interested in this little celebration:

Did you say wine and artichokes? Okay!

Did you know that Castroville, CA, is the “Artichoke Center of the World”? Right!?!? We need to road trip and help that town celebrate 60 years of ‘Choke goodness. The festival is set for June 1st and 2nd at the Monterey County Fair & Event Center. There will be live entertainment, a Wine & Beer Garden, cooking demonstrations, tours, arts and crafts, and more! Tickets start at $15.

Now that we’re all hungry, here’s a recipe to for you:

P.S. Kudos to whomever planted the first artichoke shoots in Castroville in 1922.

​Oven-Roasted Artichokes with Roasted Garlic Butter

Ingredients:
2 large globe artichokes
3 large lemons, 2 juiced, 1 sliced to yield 4 slices
Extra-virgin olive oil
Salt and freshly ground black pepper
12 whole garlic cloves
4 sprigs fresh thyme
4 sprigs fresh rosemary
1 stick salted butter, very soft

Instructions:
Preheat oven to 400 degrees. Fill a bowl large enough to accommodate the artichokes when halved with water (about 2 quarts). Add the lemon juice and lemon pieces.

Trim and dry stem end from the bottom of the artichoke. Remove tough outer leaves from the bottom of the artichokes. Trim approximately 1 inch from the top of each artichoke. Trim the tips of each leaf. Watch for the sharp barbs. Cut the artichoke in half from top to bottom. Scoop the fuzzy choke from the center of each artichoke. Immediately immerse in the lemon water.

Drizzle a large baking dish or roasting pan with olive oil. Season artichokes with salt and pepper. Place 3 cloves of garlic in each artichoke, top each with a sprig of thyme and rosemary, then place a lemon slice on each. Carefully flip the artichoke half over so the cut side is facing down. Make sure the garlic is securely inside so that it doesn’t burn. Drizzle with olive oil.

Cover with foil. Roast for 45 to 50 minutes or until tender. Place the softened butter in a small saucepan. Remove the garlic cloves from the pan and add to the butter. Mash it into the butter, then gently melt the butter. Serve the artichokes with the butter.

We’re so sad we missed out on National Peanut Butter Day (January 24th). Who knew there was an entire day devoted to nuts?

Well, we like the nut butter. So when a note from Crazy Richard’s landed in our inbox, we were intrigued. Yes, we like the nut butter. We already said that. We also like the fact that a “crazy” person has his own line of peanut buttery goodness. But most importantly, we LOLed at the company name. Let us break down why:

In all seriousness, Crazy Richard’s offers nut butters made with 100% nuts and zero additives like sugar, salts, or oils. Basically, good nuts to stick in your mouth.

Here’s one of Crazy Dick’s, errr… Crazy Richard’s recipes. 

​PB Pumpkin Chocolate Chip Cookie Dough Bites

Ingredients:

½ cup Crazy Richard’s Peanut Butter
¼ cup dairy free chocolate chips
2 TBSP maple syrup or sweetener of choice
½ cup 100% pure pumpkin
1/3 cup coconut flour (add more or less as you go to thicken the dough)

Chocolate Dip Ingredients:
Vegan chocolate melts or
1 package dairy free chocolate chips
1 tsp coconut oil

Directions:
Combine all of the ingredients (except chocolate dip ingredients) and mix until well incorporated. Roll into 12 to 18 balls (depending on how big you prefer. There’s a joke here…) and place in the freezer to chill for about 15 minutes. When chilled, remove and set aside.

For Chocolate Dip: Melt ½ cup vegan chocolate (or melt the chocolate chips and mix in the coconut oil). Dip and cover the dough balls in your chocolate and place on a tray with parchment paper to set. Place in the fridge to chill until ready to eat. Can be frozen to last longer!

​This year marks the first year that we will be without SweetHearts candies. How are we going to tell that special person that we want them to “Be Mine” without these sweet message candies? We don’t have the chocolate-covered balls to do it ourselves!

While Necco isn’t the only company to make conversation candies, they were the first and most popular. Past tense because Necco had to sell.
